Keith's Home-made Hot Dish

 
Ingredients:
  • One Box Rotini
  • 1/2 can Spaghetti Sauce (Pasta Sauce), 26 oz., or equivalent (use full can if dividing finished sauce to use later with another box of rotini).
  • Veggies - whatever you have on hand. Some suggestions:
    • Onions
    • Green Onions
    • Green/Red Peppers
    • Mushrooms
    • Tomatoes (Roma tomatoes are usually cheap, delicious, and easy to chop)
  • Olive Oil
  • Spices
    • Basil
    • Salt, Pepper
  • (Optional) Hamburger or Chicken (or even cubed tofu fried with vegetarian chicken bullion)
  • Shredded Cheese (for garnish) - mozzarella or cheddar is good
Preparation:

Prepare Rotini according to box directions. Drain. Add a little olive oil. Add uncooked, chopped tomatoes to rotini, reserving some chopped tomatoes to garnish individual serving bowls with.

Chop remaining veggies. Easy way to cook hamburger is to (after defrosting) put it into a covered microwaveable dish, cook for about 4 minutes, stir, and cook for another 3-5 minutes. Drain. Heat olive oil in large skillet, medium heat. Add vegetables and spices to pan. Stir-fry vegetables until some are slightly browned (caramelized). Add meat and spaghetti sauce, and simmer 4 to 5 minutes. Add to rotini. Note: Spaghetti sauce will stain mixing bowls, so I usually just keep using the metal pot that the rotini was cooked in.

Dish into individual bowls. Top with shredded cheese and chopped tomatoes. Serve with a smile.
